Make a Perfect Crust
1. Go with the flow Don’t worry if juices from the fruit run toward the edges of the crust. Just start folding, and tuck all that goodness inside.
2. Wrap it up Fold the edges of the crust up and over the fruit mixture, loosely shaping pleats and turning the parchment paper as you go.
3. Make it sparkle Brush the crust with beaten egg, and sprinkle with large golden crystals of Demerara sugar or coarse sparkling sugar.
BUTTERMILK WHIPPED CREAM
Freeze the bowl and beaters, and use cream and buttermilk right out of the fridge for perfect results.
1 cup heavy cream
½ cup buttermilk
2 Tbsp. sugar
Beat first 2 ingredients at high speed with an electric mixer until foamy; gradually add sugar, beating until soft peaks form. Serve immediately, or cover and chill up to 2 hours.
MAKES 3 cups. HANDS-ON 5 min. TOTAL 5 min.
